What is Matcha


Matcha is Japanese green tea in powder. Matcha tea contains the entire leaf, and has a more concentrated amount of antioxidants and beneficial plant compounds than regular tea and green tea.

Catechins belong to the group of polyphenols. They are present in many dietary products: plants, fruits (e.g. apples, blueberries, gooseberries, grape seeds, kiwi, strawberries), red wine, beer, cacao liquor, chocolate, cocoa, plain green tea; but matcha is their richest source.

What is chlorophyll


Chlorophyll is the substance that gives plants their green color. It helps plants absorb energy and get their nutrients from sunlight during the biological process known as photosynthesis. Chlorophyll is found in many green vegetables and matcha green tea, and some people also take it as a health supplement or apply it topically. In addition to playing an important part in keeping plants and vegetables healthy, chlorophyll has reported health benefits in humans, too. It is considered a natural source of antioxidants.

What is L-theanine


L-theanine is an amino acid that can be found in tea and mushrooms. Amino acids are chemical substances that constitute the building blocks of the human body since they create proteins crucial for the production of insulin, adrenaline and neurotransmitters.

Which grade of matcha is right for me


First you decide what you want to use the matcha for then you those the grade.
Ceremonial Grade is the highest quality matcha and exclusively for tea and drinking on its own.
Premium Grade matcha is a very good quality and also ideal to drink on its own but is also used in “cafe”lattes, smoothies and lemonades. Culinary Grade is a good grade and is the perfect matcha grade for cooking, baking and balancing out sweet desserts and ice cream as it is more bitter. Kitchen, cooking and classic are the lowest grade of matcha and are great for experimenting with new recipes and getting creative in the kitchen or just to add a fun green colour to the food.

I am concerned about lead pollution, radiation and pesticides


Lead contaminated matcha: This comes usually from buying untested or cheap, Chinese grown matcha blends that lack the right quality. With 32% of Chinese blends exceeding the limit, you should be careful about where you are buying your matcha. Non-certified & untested matcha: Never buy non-certified matcha tea, which may do more harm than good. Avoid drinking the majority of Chinese blends. Japan is far stricter than the likes of EU and US, so you can feel pretty safe that any Japanese tea blends are going to be clear of the majority of pesticide problems.Ecomind matcha only source from the Uji, Kyoto region that is a central part of Japan who is famous for its fertile soils and clean water and always and only organic.

How much matcha should I use


For tea use 2 bamboo spoons or ½ a tsp. of matcha.
The matcha powder are very concentrated and you don’t need much to gain all the benefits.

How much matcha can I have per day


To be safe, make sure to consume matcha in moderation as it contains natural caffeine. It’s best to stick to 1–2 cups per day and look for certified organic varieties to take advantage of matcha’s many health benefits.

Why is matcha so expensive


..it’s just green tea that’s been ground into a powder.
Genuine matcha is expensive because it is extremely labor and time intensive to make. The cultivation. Unlike, for example, sencha, matcha is stone ground tencha, a shade-grown green tea. It only grows in specific regions of Japan and requires a fixed timing of the shading period. The harvest. After harvest when preparing for the tea leaves to be ground every single leaf is carefully de-stemmed and de-veined which requires skill, time, and patience.  It is hand-harvested only 1-2 months per year from May till June. The processing. The mills required to grind the loose leaf into the most delicate powder that we all end up receiving can produce no more than 40 grams of tencha per hour. This is because tencha can only be ground in small batches to shield the leaves from overheating, which results in a loss of nutrients, or an uneven grind. Last but not least The demand. What does matcha taste like


That depends on the quality of matcha chosen
The most noticeable flavor note to consider for matcha is how smooth the balance of flavors feels in the mouth. In the highest-quality matcha brands, you’ll notice vegetal notes, a pleasant, but not astringent bitterness, nuttiness, and a smooth sweetness. Grassy and sweet, without tasting dirt. Ceremonial Grade is the highest quality matcha. It possesses a rich and sweet umami taste. Comes with a smooth texture and a creamy froth. It is distinguished by its vibrant jade green color.
Premium Grade matcha is from first & second harvest with well-balanced rich bitter-sweet taste, creamy texture. The Tea still has a bright green color. Its full-bodied flavour makes it ideal to drink on its own but is also used in “cafe”lattes, smoothies and lemonades.
Culinary Grade is matcha from second & third harvest with strong green tea taste and lingering astringency. The color is more soft green and the tea has a stronger and more bitter taste compared to higher grades of matcha which makes it the perfect matcha grade for cooking, baking and balancing out sweet desserts and ice cream. Kitchen,Cafe, Cooking & Classic Grade is matcha from third & fourth harvest with strong green tea taste and lingering astringency. The colors are more army green. In general they are suitable for confectionery, baking, making dessert and dishes. Matcha from this category is not recommended for making sugarless matcha drink because of its strong taste and lower amount of umami.

How is matcha prepared


Wisk
 – As hot tea Use 2 bamboo spoons or ½ a tsp. of matcha in a bowl and pour est. 100 ml. of hot water (70-80`) and whisk vigorously in a m-shape (not circular) motion for about 20 sec.
Mix – “Cafe Latte “ You can also mix your matcha with a milk frother. Add or ½ a tsp. of matcha into a glass or a cup and pour estimated 100 ml. of hot water (70-80`)
Shake – Ice tea If you want your matcha fast, use a shake or put it into a bottle. Just add matcha into your choice of liquid. Shake and you have matcha on the go. Warning: Never use hot water as it can cause the bottle to explode. 

Matcha as an ingredient


You can use matcha in almost anything that needs a little more acidic or bitterness or maybe just a fun green colour. In culinary and cooking grade the tea taste and full bodied slightly more acidic or bitterness, which makes it, the perfect matcha grade for cooking & baking and will hold up to sweeteners and other ingredients. 

I don’t have a whisk. Can I still drink matcha as a hot tea


Yes. The wisk provides you with a beautiful and creamy froth. You can also mix your matcha with a milk frother or similar. 

What is the best way to store Matcha


After you open your matcha, store in a cool, dry place, away from direct sunlight. Keep refrigerated after opening and air tight sealed to preserve taste, color and nutrition.

What makes matcha so healthy


In Matcha tea powder the whole leaves are consumed which is why the provenance of organic farming is essential. When you drink it, you benefit from 100% of the components contained in them. How can I identify a good quality matcha


The easiest way is to look at the colour. The highest quality of matcha is vibrant jade green.The lower the quality the less gr een you will find the matcha and the better the quality the more intense green you’ll see.

Why does some matcha taste bad


Low quality matcha is more bitter and has a strong astringent flavor. Cooking, Kitchen and classic grade are not recommended for making sugarless matcha drinks because of its strong taste but used for baking and cooking. But all grades of matcha will taste bitter if you add boiling water.

How long will matcha tea last


If unopened, matcha lasts for 6 months. If kept in the freezer it may remain fresh for up to 12 months. Once opened, if stored away from heat, light, and moisture, ceremonial grade matcha should be consumed within 4 to 5 weeks.

When is the best time to drink matcha


If you are sensitive to caffeine, we recommend drinking your matcha in the morning, midday or afternoon instead of in the evening. If you have no problem sleeping after drinking fx. coffee. Drink your matcha any time you like. We recommend 1-2 cups pr. day ( 2-4 gr. pr. day )

Does matcha tea have caffeine


Yes. Matcha is green tea, and green tea contains caffeine. Because Matcha is made from crushed whole tea leaves, the caffeine content is somewhat higher than that of bagged tea. In fact, the Matcha caffeine levels can actually equal half the level of a black cup of coffee. When comparing Matcha’s caffeine to steeped green tea you receive 31.8 mg caffeine in regular green tea and 68 mg of caffeine in Ceremonial Matcha. Keep in mind, caffeine isn’t bad for you in moderate amounts and is actually beneficial in the form of Matcha. It’s a mild stimulant that naturally occurs in a variety of plants, beans, fruits and nuts

Where is your matcha grown

What is the difference between “ceremonial” “premium” and “culinary” matcha

Why does my Matcha tastes bitter


Low quality Matcha is more bitter tasting. BUT boiling water will make all your matcha taste bitter. Get the temperature right. Serve it cooler than your intuition tells you. Boiling water makes the chlorophyll-rich matcha bitter, since chlorophyll gets more bitter with each rising degree of hot water. Use est. 75-100 ml. of hot water 70-80 degrees and you will experience the sweet umami taste. But it all has to start with a good high quality matcha, like ceremonial. Low quality matcha is more bitter and has a strong astringent flavor. Cooking, Kitchen and classic grade are not recommended for making sugarless matcha drinks because of its strong taste but used for baking and cooking. But all grades of matcha will taste bitter if you add boiling water.

Why doesn’t my matcha froth well


To make a beautiful creamy foam  whisk vigorously in a m-shape (not circular) motion for about 20 sec. And always use a high quality matcha as ecomind ceremonial matcha.

Why do I have clumps in my matcha


Matcha is very sensitive to moisture, condensation or heat. Matcha powder has slight electrostatic energy, making it clump and form lumps.When you leave the matcha tea for sometime, there is still some matcha powder falling to the bottom of the cup no matter how hard you whisked. This happens to all matcha powder in the world, even for the top grade matcha powder. The best advice is to sift it. That will break the lumps and always refrigerate after opening.

Will the water temperature affect my matcha taste

There is two traditional Japanese styles of matcha preparation: usucha (“thin tea,” literally translated) and koicha (“thick tea”). usucha: Use 2 bamboo spoons or ½ a tsp. of matcha in a bowl and pour est. 100 ml. of hot water (70-80`) koicha: Use 2-4 bamboo spoons or 1 tsp. of matcha in a bowl and pour est. 100 ml. of hot water (70-80`) The final viscosity of koicha is something like that of warm honey or melted chocolate. The viscosity of usucha is something like an espresso
